Whenever we go out for Thai food, I always order Pineapple Fried Rice or Chicken with Peanut Sauce. So, I thought I'd try to recreate one of my favorite Thai dishes at home.

Chicken with Peanut Sauce

Ingredients:
4 chicken breasts
1/2 cup creamy peanut butter
2 tablespoons soy sauce
2 tablespoons lime juice
1 tablespoon brown sugar
1 tablespoon ginger
Directions:
1. Coat the chicken in a light layer of flour. Fry in two tablespoons of olive oil until browned.
2. In a bowl, whisk together the peanut butter, soy sauce, lime juice, sugar, ginger, and 1/3 cup water until smooth.
3. Serve chicken with peanut sauce, brown rice and broccoli. Makes four servings.
