Strawberry Shortcake

Ingredients:
2 1/2 cups flour
1/3 cup sugar
1 stick of butter
2 1/2 teaspoons baking powder
1 teaspoon salt
1 cup milk
Directions:
1. Preheat oven to 425 degrees. In a large mixing bowl, combine butter and sugar. Cut with a pastry blender {or two knives} until the mixture resembles coarse meal.
2. In a separate bowl, combine flour, baking powder and salt. Add the flour mixture to the butter and sugar mixture. Add milk and stir just until moistened.
3. On a lightly floured surface, roll dough into a four inch by eight inch rectangle. Cut the dough into eight squares. Transfer to a baking sheet and sprinkle with sugar.
4. Bake for 25 to 30 minutes. Serve with strawberries and whipped cream or ice cream.

Strawberries are my all time favorite. I have often wondered why I didn't have strawberry shortcake rather than wedding cake. Duoh! That was one of my regrets, but it didn't even occur to me until a year later!
ReplyDeleteI love to eat strawberry shortcake with angel food cake and coolwhip --- topped the frozen strawberries in syrup thawed. I'm sure it's really healthy! :)
i prefer any fruit dipped in ice cream, dark chocolate, or nutella.
