Strawberry Cake

Ingredients:
1 box of white cake mix
1 box of strawberry jello
1 package frozen strawberries {thawed}
4 eggs
1/2 cup vegetable oil
1/4 cup water
Directions:
1. Preheat oven to 350. Lightly grease two 9-inch cake pans. Puree strawberries in a blender.
2. In a large mixing bowl, combine cake mix and jello. Add pureed strawberries, eggs, oil and water.
3. With an electric mixer, beat at medium speed until smooth. Pour into cake pans and bake for 40 minutes.

Strawberry Cream Cheese Frosting

Ingredients:
1/4 cup butter
2 packages cream cheese
1 package frozen strawberries, thawed
1/2 teaspoon vanilla extract
5 cups powdered sugar
*Paula's recipe called for 1 package cream cheese and 7 cups of sugar, but we modified it so the icing would be thicker.
Directions:
1. Puree strawberries in a blender.
2. With an electric mixer, beat butter and cream cheese until creamy.
3. Add the vanilla extract and 1/4 cup of the strawberry puree. {The leftover puree makes a great ice cream topping.} Gradually add powdered sugar, beating until smooth.
