This is the second year in a row that Adam's requested a mixed fruit tart for his birthday. It's one of my favorites things to bake because it looks really pretty, tastes delicious, and is surprisingly easy to make!
Mixed Fruit Tart
{From the Southern Living Cookbook}
Ingredients:
1 1/2 cups flour 1/2 cup sugar
1/2 cup butter (softened) 1/3 cup slivered almonds (ground)
1 egg yolk 1 tsp. vanilla extract
1 tsp. almond extract 8 oz. package cream cheese (softened)
3 Tbs. sugar 3 Tbs. orange juice
1/2 cup peach jam 1 Tbs. butter
1 Tbs. lemon juice 2 cups fresh raspberries
2 kiwifruit 11 oz. can mandarin oranges
1/2 cup peach jam 1 Tbs. butter
1 Tbs. lemon juice 2 cups fresh raspberries
2 kiwifruit
Directions:
1. Combine first 4 ingredients in a mixing bowl; beat with an electric mixer until blended.
2. Add egg yolk and other flavorings: mix until dough just holds together.
3. Firmly press dough into an 11-inch tart pan.
4. Bake at 375 for 15 minutes; cool completely on a wire rack.
5. Combine cream cheese, sugar and orange juice; beat at medium speed 1 to 2 minutes or until smooth.
6. Spread mixture evenly over cooled crust.
7. Cover and chill 30 minutes or until mixture is firm.
8. Combine jam and next 2 ingredients in a small sauce pan.
9. Cook over low heat, stirring constantly until jam and butter melt.
10. Arrange fruit over cream cheese mixture up to 2 hours before serving; brush fruit with glaze.

It is really pretty...there used to be a picture of one in one of my mother's favorite cookbooks. So you've just reminded me of her :)
