Quiche Florentine

We love, love, love quiche. Not only is it super easy and delicious, but it also reminds us of our time together in France.

{From Martha Stewart}

Ingredients:
1 tablespoon butter
3 green onions, minced
1 cup fresh spinach, stems removed and roughly chopped
4 slices bacon, cooked and roughly chopped
2 cups shredded cheese {I usually use cheddar because it's always on hand}
1 pie crust
4 eggs
1 1/2 cups milk {I usually use skim, again, because it's always on hand}

Directions:
1. Preheat oven to 350 degrees. In a large skillet, heat butter over medium heat. Add green onion and spinach. Season with salt and pepper. Cook until wilted, two to three minutes.
2. Pour spinach mixture into your prepared crust. Top with bacon and shredded cheese.
3. In a large bowl, whisk together eggs, milk, one teaspoon salt and one teaspoon pepper. Pour egg mixture into crust.
4. Bake for one hour. Let stand for ten minutes before serving.

  3. I just made this quiche and I have to say that this recipe calls for WAY too much half and half! i made the half and half/egg mixture and only ended up putting about half of it into the quiche, and it's still overflowing in the oven. We'll see how it tastes...
