Black Bean Tortilla Soup

Ingredients:
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon chili powder
2 cans diced tomatoes
2 cans black beans, rinsed and drained
1 can chicken broth
1 can of corn
1 tablespoon lime juice
Directions:
1. Heat oil in a large saucepan. Add garlic and chili powders. Cook until fragrant, or about one minute.
2. Add tomatoes {with juice}, black beans, chicken broth, and one cup water. Season with a little salt and pepper.
3. Bring soup to a boil, then reduce to a simmer. Stir in lime juice and then remove from heat.
4. Serve with crushed tortilla chips and shredded cheddar cheese. Makes four servings.

I didn't want to buy a whole bag of tortilla chips, just for one recipe. So, I made my own!

Tortillas
Canola Oil
Salt
Directions:
1. Slice each tortilla into eight wedges, like you would a pie.
2. Place the wedges on a greased baking sheet. Brush each with a little canola oil. Sprinkle with salt.
3. Bake for ten minutes at 350 degrees.
