Zucchini Bread

Zucchini Bread

Ingredients:
1 zucchini
1 cup brown sugar
2 tablespoons white sugar
2/3 cup canola oil
2 teaspoons vanilla extract
2 eggs
3/4 cup white flour
3/4 cup wheat flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 teaspoons cinnamon
3/4 teaspoons nutmeg
1/4 teaspoons ginger

Directions:
1. Preheat oven to 350 degrees. Grease a standard loaf pan. Grate zucchini.
2. In a large bowl, whisk together sugars, oil, vanilla and eggs.
3. In a separate bowl, combine flours, baking soda & powder, and spices.
4. Add flour mixture to egg mixture. Stir to combine well. Add grated zucchini.
5. Pour batter into loaf pan. Bake for fifty minutes. Cool completely before slicing!

Banana Bread

Banana Bread

Ingredients:
1 cup wheat flour
3/4 cup white flour
2 1/2 teaspoons baking powder
1/2 cup sugar
1 egg, lightly beaten
2 ripe bananas, mashed
1/3 cup vegetable oil

Directions:
1. Preheat oven to 350 degrees. Grease a standard loaf pan.
2. Combine flours, baking powder and sugar in a large bowl. Make a well in the center.
3. Combine egg, mashed banana, milk and oil in a separate bowl.
4. Add wet mixture to dry mixture, stirring just until moistened.
5. Pour batter into the loaf pan. Bake for one hour.
