Spinach Lasagna

The best part of this lasagna was all the leftovers we got from it!

Spinach Lasagna

32 oz. ricotta cheese
2 eggs
1 bag of fresh spinach
48 oz. tomato sauce
12 whole wheat lasagna noodles
4 cups mozzarella cheese

1. Preheat oven to 400 degrees. Cook lasagna noodles according to package directions.
2. Whisk together ricotta cheese, eggs, salt and pepper.
3. Spread a little tomato sauce in the bottom of a 9x13 pan. Arrange a layer of lasagna noodles on top. Spread 1/3 of the ricotta mixture over the noodles. Top with a layer of spinach, followed by 1/3 of the tomato sauce and 1/3 of the mozzarella cheese.
4. Repeat to make two more layers, ending with mozzarella cheese on top.
5. Cover with aluminum foil and bake for thirty minutes. Remove the foil and bake for fifteen more minutes. Makes eight servings.
