Weekend Breakfasts

We have a very important rule in our house. No oatmeal or cereal on the weekends. It would just take all the spice out of life. Instead, we alternate between these two recipes. Bacon is usually also involved.

Blueberry Muffins

Blueberry Muffins
{From All Recipes}

Ingredients:
2 eggs
1 cup sugar
1/2 cup vegetable oil
1/2 teaspoon vanilla extract
1 cup white flour
1 cup wheat flour
1/2 teaspoon baking soda
1 cup sour cream
1 cup frozen blueberries

Directions:
1. Preheat oven to 400 degrees. Grease 12 muffin cups.
2. In a large bowl, whisk eggs until beaten. Gradually add sugar. Continue whisking while slowly adding oil. Stir in vanilla.
3. In a separate bowl, combine flours and baking soda.
4. Stir dry ingredients into egg mixture alternately with sour cream. Gently fold in blueberries.
5. Scoop batter into prepared muffin cups. Bake for twenty minutes.

Whole Wheat Waffles

Whole Wheat Waffles

Ingredients:
1 1/4 cup white flour
1 cup wheat flour
4 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup vegetable oil
3 tablespoons honey
5 eggs
2 cups milk
1 1/2 teaspoons vanilla extract
1 tablespoon molasses

Directions:
1. Preheat waffle iron.
Combine flours, baking powder, cinnamon and nutmeg in a mixing bowl.
2. In a separate bowl, whisk together oil and honey. Add eggs, milk, vanilla, and molasses. Whisk well to combine.
3. Add dry ingredients to wet ingredients. Stir until combined.
4. Pour 1/2 cup of mix into waffle maker and cook. Repeat until you've made about ten waffles.
