Chicken and Biscuits

This recipe is sort of like chicken pot pie, but less work since it's made in a crock pot.

Chicken and Biscuits
{From Real Simple}

4 carrots, chopped
2 celery stalks, chopped
1 small onion, chopped
1/4 cup flour
6 boneless, skinless chicken thighs
1/2 teaspoon poultry seasoning
1 cup chicken broth
6 biscuits {I just used the Pillsbury kind, since I had a coupon}
1 cup frozen peas
1/2 cup half-and-half

1. In your crock pot, toss together the carrots, celery, onion and flour. Place the chicken on top. Season with poultry seasoning, 1 teaspoon salt, and 1/4 teaspoon pepper. Add the chicken broth.
2. Cover and cook the chicken and vegetables for 5-6 hours on low or 2-3 hours on high.
3. Thirty minutes before serving, prepare your biscuits.
4. Ten minutes before serving, add the peas and half-and-half to the crock pot mixture. Stir to combine.
5. To serve, half the biscuits. Spoon a layer of chicken and vegetables between the two halves. Makes six servings.
