Better Than Starbucks

The new Target is basically the land of temptation for me. First, there's all the cute stuff for sale everywhere you look. Second, they have Coke Icees AND a Starbucks. Somehow, when I dropped by there on Monday, I managed to steer myself away from that area and only leave with the one item I stopped in to grab. That is quite a feat, I tell you. Then I came home to whip up my own yummy snack and warm drink.

Lemon Pound Cake + Hot Cocoa

Lemon Pound Cake

Ingredients:
1/2 stick butter
3/4 cup + 3 tablespoons sugar
1 cup flour
1/4 teaspoon salt
1/4 teaspoon baking soda
3 tablespoons lemon juice
1/4 cup milk
2 eggs

Directions:
1. Preheat oven to 350 degrees. Butter a loaf pan and sprinkle with sugar. Tap out excess and set aside.
2. Mix flour, salt and baking soda in a small mixing bowl. In another small bowl, stir together the milk and one tablespoon lemon juice.
3. Using an electric mixer, cream butter and sugar until fluffy. Mix in eggs. Alternate adding the flour mixture and the milk mixture.
4. Pour batter into loaf pan. Bake for about 35 minutes, or until a cake tester comes out clean.
5. While the cake is baking, stir together the remaining lemon juice and sugar. Immediately after removing the cake from the oven, brush with the lemon glaze.

Dark Hot Chocolate

Ingredients:
Milk
Sugar
Hershey's Extra Dark Cocoa

Directions:
1. Pour one cup of milk into a small pot over medium heat. Cook until the milk is steaming, stirring occasionally to prevent milk burning onto the pot's bottom, which is not fun to clean.
2. Add one tablespoon of cocoa and two tablespoons of sugar to your mug. We've tried Splenda, since we use it all the time for sweet tea, but it's just not as good, trust me. Add the steamed milk and stir until combined.

    I just discovered Coffee Tree Roasters' mochas, and they are deadly. Good thing there isn't one in Oakland for those days I'm on campus ...
