Red Beans and Rice

Red Beans & Rice

Ingredients:
1 pound red beans
1/2 pound smoked sausage
2 onions, chopped
1/2 bell pepper, chopped
1 stalk celery, chopped
2 cloves garlic, chopped
1/2 cup parsley, chopped
6 cups chicken broth

Directions:
1. Rinse beans. Soak overnight in a stockpot, adding 1/4 teaspoon baking soda to the water.
2. When ready to cook, drain beans and set aside. Heat a little olive oil in the pot.
3. Cut up the sausage and fry it for a few minutes. Remove to add the onion, bell pepper, celery, garlic and parsley.
4. Saute until tender. Then sprinkle 1 tablespoon flour and mix well. Season with a little salt and pepper.
5. Add beans, sausage and chicken broth. Bring to a boil, then cover and let simmer for three or four hours.
6. During the last thirty minutes of cooking, mash beans lightly with a spoon and stir frequently.

Totally, totally worth all the prep time. Just serve with brown rice and veggies!
