Sometimes when your husband has a really important & difficult exam to take, he needs an extra special breakfast.

Pumpkin Waffles

Ingredients:
2 1/2 cups flour
1/3 cup brown sugar
2 1/4 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon ginger
4 eggs, separated
2 cups milk
1 cup pumpkin puree
3/4 stick butter, melted
Directions:
1. Preheat the waffle iron. Combine flour, sugar, baking powder & soda, cinnamon and ginger in a small mixing bowl.
2. In a large mixing bowl, whisk egg yolks with milk, pumpkin and butter until smooth. Add dry ingredients until just combined.
3. With an electric mixer, beat the egg whites until they form soft peaks. Fold into the rest of the waffle batter. I just have a regular waffle iron and using 1/3 cup of batter each time, I got twelve waffles. Serve with bacon, obviously!

Although these were seriously delicious, afterwards I couldn't help thinking that maybe Saturday morning wasn't the best time to try out a new recipe. The whole time Adam was off taking the math GRE, I was so worried that the waffles would have made him sick somehow and it would have ruined the test, which is only offered twice a year!
