Scrimping & Splurging

This weekend didn't feel very weekend-y. We did homework, chores, and...*wait for it*...our taxes. Exciting stuff, right?

Well, speaking of taxes, we are trying to do a better job of managing our money this year. And going along with that, we're trying to be really conscious of our spending habits. We write down everything we buy in a spreadsheet. Then, at the end of the month, we compare how much we spent in each category to our monthly budget.

It's got us thinking that we have some areas where we really don't mind scrimping and other areas where we usually splurge a little.

We are the homebodiest homebodies you will ever meet, so skipping the whole dinner-and-a-movie date most of the time isn't a sacrifice for us. Plus, all our favorite restaurants {tex-mex, barbecue, seafood} are back in good ol' Texas, so we don't feel like eating out in Pittsburgh as much.

Before getting married, I used to think that having smart phones would be pretty neat. When we get our new joint cell phone plan, I came really close to convincing Adam that they were a good idea. But then I got an iPad for my TA job last semester and I never even took it out of the box until Christmas break. {It's back with the business school now.} We don't mind not owning iPhones because we just wouldn't get enough use of out of them.

So, we don't care about eating out, going to the movies, or smart phones. But we do have some areas where we like to splurge.

Like most girls, clothes are my weakness, although I'm doing a lot better in this area since getting married. And Adam does purchase the occasional book or video game.

But our real splurge area is vacations. Our family is spread all across the country, so we are quite the little jet-setters. And we like to travel in style. We'll pay a little extra to avoid those dreaded early, early morning flights. We prefer paying for the Super Shuttle instead of taking the free city bus to the airport. And there's nothing worse than cheap, gross hotels.

The more we thought about this, the more we realized that everyone has their own scrimp and splurge areas.

For most of the country, the splurge area seems to be Apple's "magical" new product of the moment...

We love, love, love quiche. Not only is it super easy and delicious, but it also reminds us of our time together in France.

Ingredients:
1 tablespoon butter
3 green onions, minced
1 cup fresh spinach, stems removed and roughly chopped
4 slices bacon, cooked and roughly chopped
2 cups shredded cheese {I usually use cheddar because it's always on hand}
1 pie crust
4 eggs
1 1/2 cups milk {I usually use skim, again, because it's always on hand}

Directions:
1. Preheat oven to 350 degrees. In a large skillet, heat butter over medium heat. Add green onion and spinach. Season with salt and pepper. Cook until wilted, two to three minutes.
2. Pour spinach mixture into your prepared crust. Top with bacon and shredded cheese.
3. In a large bowl, whisk together eggs, milk, one teaspoon salt and one teaspoon pepper. Pour egg mixture into crust.
4. Bake for one hour. Let stand for ten minutes before serving.

Hair Clips

I love a good British miniseries. The beautiful accents, costumes and scenery get me every time. When Adam was off doing his math competition thing last weekend, I discovered Downton Abbey and watched the whole thing. So addicting!

While I was watching ridiculously too much tv, I kept my hands busy by crafting up some felt flower hair clips. Allison gave me one over Christmas and I've been wearing it pretty much non-stop since, so I figured I could use a few more colors. I followed the easy tutorial over at Jones Design Company.

They're not exactly EmersonMade or ban.do quality, but for only a couple bucks they keep my greasy/sweaty hair off my forehead.

Here I am stylin' one of my new creations. I would say that I normally dress cuter than this...but that would be a lie. If I did "What I Wore Wednesday" it would just be me wearing this same hoodie six days in a row.

Hitting the Ski Slopes

On Friday night, Adam and I went to a fund-raising event at the Newman Center. Once a year, the priests organize a special night to keep the Newman Center's retreat house in tip-top shape. It's the only time students are allowed upstairs into the Priest's fancy-shmancy living quarters!

We had to duck out a little early so Adam could finish his big physics lab report. Which he submitted twenty minutes before the midnight deadline.

On Saturday, we went on a ski trip with the lovely Pitt Program Council. They've given us great deals before {to Cedar Point and Fallingwater} and didn't disappoint this time, with a lift pass/ski rental/lesson combo for only $60 per person.

Well, we arrived at Seven Springs Resort and went to grab our gear. Which is when we encountered a little snag. You see, I have really, really short legs, even for my 5'2" height. So, the thickest part of my calves are closer to my feet than normal. This made it pretty much impossible to find boots that weren't super tight.

But Adam helped me try on like five different pairs {without complaint - he's going to be a great dad one day!} and we finally found a pair that sort of worked. Then we met up with the ski instructor for our first-ever lesson.

Turns out, we're pretty clumsy and not very athletic, so skiing wasn't exactly our strong suit. And, the whole time, I couldn't stop thinking about how tight my boots were. So, we decided to call it a day after the lesson.

That's the story of our first, and most likely last, ski adventure. We're happy we tried it once and can check it off our Pittsburgh bucket list. Now we know that we'd rather be on the beach than on the slopes any day - where there are no boots required.

Happy Birthday, Jenn!

Today is my sister-in-law Jenn's birthday! We wish we could be there {Houston} to celebrate her big day.

1. She met her husband Jeff {Adam's oldest brother} when they were RAs together at WVU. Next month, they'll have been married for two years.

2. She is an Italian from New Jersey. So, basically, don't mess with her.

3. She loves sushi and knows how to make her own.

4. She's a cat person. She and Jeff have two kitties, Max and Jack.

5. She recently got upgraded to her own office at work!

Adam: You guessed it, his modern physics lab. He and his lab partner had to redo all their data yesterday {for a lab they've been working on for the last month}. And now he has to write a 14-page lab report before midnight.

Dark Chocolate Cake

Over the weekend, I made a dark chocolate cake in honor of Valentine's Day. I know, I know. We're supposed to be doing that whole healthy eating thing this month. But I used whole wheat flour {you'd never know!} and dark chocolate is full of antioxidants, right?

Dark Chocolate Cake

{From Better Homes & Gardens}

Ingredients:
3 eggs
2 cups flour
3/4 cup Hershey's Dark cocoa powder
1 teaspoon baking soda
3/4 cup butter
2 cups sugar
2 teaspoons vanilla
1 and 1/2 cups milk
1/2 cup semisweet chocolate chips

Directions:
1. Grease two nine-inch round cake pans. Line bottoms of pans with parchment paper. Grease parchment paper and lightly flour pans. Preheat oven to 350 degrees.
2. Beat butter with electric mixer until creamy. Gradually add sugar until combined. Add eggs one at a time, beating after each. Beat in vanilla.
3. In a separate bowl, combine flour, cocoa powder and baking soda. Alternately add flour mixture and milk to butter mixture, beating after each addition until combined.
4. Stir in chocolate chips. Divide batter among prepared pans. Bake for 35 minutes.
5. Cool cakes in pans on wire racks 10 minutes. Remove layers from pans. Cool thoroughly on wire racks.

Chocolate Cream Cheese Frosting

Ingredients:
1/2 cup butter
2 8 oz. packages cream cheese
5 ounces unsweetened chocolate
2 teaspoons vanilla
3 cups powdered sugar
1/4 cup milk

Directions:
1. In a saucepan over low heat, melt the chocolate, stirring constantly. Let cool.
2. Beat butter and cream cheese with an electric mixer until fluffy.
3. Add the melted and cooled chocolate to the butter mixture. Add vanilla.
4. Gradually beat in powdered sugar and milk until you get a spreading consistency.

Valentine's Gifts

We didn't exchange thoughtful, romantic Valentine's gifts. Instead, we just used Valentine's Day as an excuse to splurge on a few things we've been wanting. So, we gifted each other some seasons of Everybody Loves Raymond, our favorite show at the moment.

Happy Valentine's Day!

Happy Valentine's Day, Everyone!

We had a lovely weekend. Adam was in a math modeling competition, so I got to spend some time doing all my favorite girly activities - baking, crafting, reading magazines, getting hooked on a new BBC miniseries.

But we managed to squeeze in some Valentine's fun too. We had brunch at our favorite place, Pamela's Diner, and shared our usual strawberry pancakes, bacon, and breakfast potatoes. Whenever we share something at restaurants {usually dessert} it always turns into a race to eat our fair share before the other person does!

We also watched one of my favorite love stories, The Young Victoria. You know that part after Prince Albert saves Queen Victoria's life and he says:

"You are the only wife I will ever have. You are my whole existence, and I will love you till my very last breath."

Adam's response was "Yeah, ditto." Oh, he's such a romantic!

Lentil Soup

I've said it before and I'll say it again - there's nothing like a warm bowl of soup when it's hovering around 15 degrees outside.

Ingredients:
1 large onion
3 medium carrots
1 tablespoon garlic powder
2 tablespoons tomato paste
1 1/2 cups lentils, rinsed
1/2 teaspoon thyme
2 cans reduced-sodium chicken broth
1 tablespoon cider vinegar
Salt and pepper to taste {or our favorite Cajun seasoning, Tony's}

Directions:
1. Dice onion and carrots. Using one tablespoon olive oil, cook in a stockpot for five minutes.
2. Stir in garlic powder and tomato paste. Cook for one minute.
3. Add lentils, thyme, chicken broth, and two cups water. Bring to a boil and then reduce to a simmer. Cover and cook for forty minutes.
4. Stir in vinegar, salt, and pepper. Serves four.

Super Bowl Sunday

This weekend was actually pretty eventful, compared to the last few. On Friday night, we went to a lecture by Dr. Roback-Morse of the Ruth Institute, sponsored by the Newman Center. She talked about how marriage is pretty much great all around - for children, for society - and we have to agree!

On Saturday, we went to the Pitt vs. Cincinnati basketball game. Did you know that Pitt is ranked fourth in the nation right now? We're getting a little excited for March Madness.

And, on Sunday, we donned our Steelers gear for the Super Bowl.

Caitlin: My history class on 20th century Britain. I'm usually stifling a yawn in all my business classes, but I'm like a different person in my history course - asking questions and furiously note taking. It's like I actually enjoy learning or something!

Adam: His usual Dave & Andy's and Halo time with his old roommates.

Caitlin: Not getting to sleep early enough. Why does our 10:30 bed time always get pushed back an hour?

Adam: Finding out that his modern physics lab is going to be way harder than expected. This is definitely going to be his hardest semester of college by far.

Chicken Enchiladas

Adam and I could eat Tex-Mex every day it would never, ever get old. So, of course, we love enchiladas. I'm sure you've all seen really complicated enchilada recipes around the web, like this one recently posted by the fabulous Pioneer Woman. Obviously, everything she comes up with is fantastic, but I have a little enchilada recipe that fares much better on the easiness-to-deliciousness scale.

Chicken Enchiladas
{From My Mommy}

Ingredients:
Whole Wheat Tortillas {usually I have two and Adam has three}
Two Chicken Breasts
Shredded Cheddar Cheese
Enchilada Sauce {you can find this ready-to-go in a can or in a seasoning packet that you'd have to combine with tomato paste and water}

Directions:
1. Cook chicken for forty-five minutes at 350 degrees.
2. Dice chicken into small pieces.
3. Fill each tortilla with diced chicken and cheese. Roll and place in a glass baking dish.
4. Spread enchilada sauce over each tortilla. Top with more shredded cheese.
5. Bake at 350 for thirty minutes. We like to have ours with corn and salad.

You can totally customize this recipe however you'd like. I've also made them with black beans before, when I had a vegetarian roommate. My mom always adds peppers to the chicken and cheese mixture. Go crazy!

Parks & Rec Cast

By far, our favorite tv show is Parks & Recreation. It basically combines the awesomeness of The Office {because they share a producer} and 30 Rock {because Tina Fey and Amy Poehler are SNL buds.}

But we don't just love Parks & Rec for it's hilarious-ness. It's also, in our opinion, the cleanest show on television. There is rarely any mention of sex or anything like that, which is quite unusual today.

So, if you're looking for a good, clean comedy, check out Parks & Rec. I promise you'll love it!

Six Months

Jonathan's Concert

Our friend, Jonathan, is in a band at his church. They mostly lead worship there, but they occasionally have concerts at other venues. On Friday night, we went to his concert ... at a hookah bar. As the lamest college students in America, we're usually not even out past ten on Friday nights! Of course, we didn't actually smoke anything. Instead, our friends, Pete and Clare, taught us how to play euchre while sipped hot tea and listened to Jonathan's rockin' band.

The rest of the weekend consisted mainly of homework, unfortunately.

Yesterday, we celebrated six months of wedded bliss. When we got home from our long days at school, we changed into fancy clothes and had a delicious dinner of homemade lasagna, salad and garlic bread. We were planning to use our Groupon to the Milkshake Factory for dessert, but the prospect of going outside in the cold, windy weather and waiting for a bus, just to have an icy dessert, didn't seem too appealing.

So, we got in our pajamas and were snuggling in bed, watching Everybody Loves Raymond, by 7:30. And it was a very fine anniversary celebration, indeed.
